Episode 005: Caitlin & Maddison
This week we talk with Caitlin and Maddison, two ladies earlier in their careers, about what it means to be a millennial. Both are millennials but on very different ends of the spectrum. Listen as we discuss:

RECIPE: Semi-Homemade Southwest Chicken Salad Feat. Chipotle Chicken
Servings: 4
Ingredients:
1 bowl of "just chicken" from chipotle
2 spears of Romaine lettuce, chopped
1/4 cup of thinly sliced red onion
2/3 can of black beans, rinsed
1/4 of a red cabbage, chopped
1 cup cherry tomatoes cut in half
2 tbsp of pumpkin seeds
1/2 cup Cotija cheese
Dressing:
2 limes, squeezed
Small handful of finely chopped cilantro
1 minced clove of garlic
3 tbsp olive oil
Combine salad ingredients in a large bowl. Put dressing ingredients in a small jar, cover with lid and shake. Add to salad, mix, serve! I served this salad with chips and queso, also from chipotle. (Spoiler alert: the queso is not great. But this salad was a hit!)
