RECIPE: Mango, Black Bean & Kale Salad
Servings: 2
Ingredients:
1/2 package of pre-cut kale
1 mango (diced)
1/2 can black beans
1 lime (juiced)
2 tbsp olive oil
cilantro
1/3 cup feta cheese
1/4 tsp garlic powder
salt & pepper (to taste)
Place kale in a large bowl and massage in 1/2 tbsp olive oil and a healthy dash of salt and the juice of half a lime. Massage for 20 seconds and let sit for a few minutes. Add the black beans, mango, chopped cilantro and feta cheese.
Dressing: combine the olive oil, remaining lime juice, garlic power, salt and pepper into a small jar. Shake well then pour over the salad. Stir well and serve with a side of tortilla chips!
